Marinate fish in 1 cup soy, 1 chunk of fresh ginger, 1 teaspoon cyan pepper, 1 tablespoon sesame oil and 2 tablespoons sugar.

Let the fish marinade in the refrigerator one to two hours.

Sear fish on both sides in olive oil in an oven proof pan, and then finish in a 400 degree oven 5 to 8 minutes

Sauce-

1 cup white wine, 2 cloves garlic, 1/4 sliced white onion, one stalk leek- white part only. Boil in a pot and reduce by 1/2. Next slowly add 1 cup cream and reduce until it thickens to a desired consistency.  Put the mixture in a blender and slowly blend in 1/4 pound of butter.

Presentation

Put the sauce on the bottom of the plate, place fish on top of the sauce and top with micro arugula  serve with rice and steamed vegetables- like baby carrots and broccoli
